A Deliciously Healthy Summer Side: Broccoli, Cucumber and Grape Salad


I love summertime meals when they’re cool and simple.

No oven heating up the house.

No pots to scrub.

Just some seasoned grilled fish or chicken, sliced tomatoes fresh from the garden with a sprinkle of sea salt and cracked pepper, and a cool, creamy side salad that showcases local produce at its peak, and I’m as happy as a clam.

Spence had just returned from camp victoriously unscathed save for four score and seven mosquito bites all on his ankles, feet and forearms, and Logan actually had a night off from expediting burger orders, allowing our little family to be reunited over dinner once more. And that means the world to me.

Our dinner together was even sweeter given I didn’t slave over a complicated meal.

This salad is summer perfection, and includes a combination that I would never have dreamt up, but that somehow really works. The sweet crunch of the grapes paired with the savory broccoli, cucumber, onion, and dressing is absolutely addicting.

And when topped off with crunchy sunflower seeds, it’s a perfect summery, salty, sweetly-savory bite!

Here’s how you make that bite:

Serves 4-6


  • 2 medium heads of broccoli, finely chopped/ diced
  • ½ english cucumber, diced
  • 1 cup red/purple grapes, chopped
  • 3 Tbsp onion, finely chopped (I used shallots.)
  • 2 to 3 Tbsp unsalted sunflower seeds (If using salted seeds, omit salt from the dressing.)
  • 3/4 cup mayonnaise
  • 3/4 cup plain Greek yogurt
  • 1 Tbsp. lemon juice
  • 1/4 tsp. salt (optional)
  • 1/4 tsp. pepper





In a medium bowl, stir together chopped broccoli, diced cucumber, chopped grapes, diced onion and sunflower seeds.




In a separate bowl, combine the mayo, yogurt, lemon juice, salt and pepper. Mix well.




Mix the dressing into the salad and let it chill in the fridge for a few hours so the flavors meld.

Serves 6
Prep time 20 minutes

  • 3 tablespoons onion (chopped)
  • 3 tablespoons sunflower seeds (if salted, omit salt in dressing)
  • 3/4 cups mayo
  • 3/4 cups Greek yogurt
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt (omit if using salted sunflower seeds)
  • 1/4 teaspoon pepper


Step 1
In a medium bowl, stir together chopped broccoli, diced cucumber, chopped grapes, diced onion and sunflower seeds.
Step 2
In a separate bowl, combine mayo, yogurt, lemon juice, salt, and pepper. Mix well.
Step 3
Mix the dressing into the salad.

    This recipe definitely caught my attention. As we are living in a very small apartment until our house is built, and most of my baking pans and dishes are packed away, this recipe is definitely one that sounds delicious and one I can make. Thanks Becky!!!
