Christmas Appetizer: Asparagus with Wasabi Mayo Dip


If you’re looking for a quick and festive appetizer to bring to a holiday get-together, look no further.  This asparagus plate has the festive colors of the season as well as the freshness of veggies.  Bonus: preparation will only take you 20 minutes from start to finish!  Plus, you can make it a day or two ahead of time – just keep it covered in the fridge.

3 lb thin to medium asparagus, trimmed
1 cup mayonnaise
4 teaspoons soy sauce
1 1/2 teaspoons sugar
2 teaspoons fresh lemon juice
2 teaspoons wasabi paste


Blanch asparagus in 2 batches in a large saucepan of boiling salted water 1 minute. Transfer to a colander and rinse under cold running water to stop cooking. Drain well and pat dry. (Be sure to heed the one minute cooking time – you want the asparagus to retain its bright green color, and be tender-crisp for dipping.)

Whisk together mayonnaise, soy sauce, sugar, lemon juice, and wasabi paste until sugar is dissolved.

Serve asparagus with dip.
