Fabulous 5-Ingredient Fiesta Dip: Perfect for Casual Deck Dates!
There are few things my husband, Jame, and I enjoy more than having folks over for impromptu cocktails and appetizers on our deck during warm summer evenings.
They’re carefree deck dates. No hurrying and scurrying. Minimal expectations. Just one or two simple dishes, beer, wine, and laughter.
A couple of weeks ago, we had friends over for quesadillas and Coronas. We sat in the gazebo and laughed and talked with Italian white lights circled above our heads. There was a steady drizzle outside, but we were cocooned under the protection of the roof, and within the joy of shared friendship.
Impromptu is key. With an impromptu invite, everything is that much more casual and simple, just the way I like it. With the quesadillas, I had all of the ingredients in the house from Logan’s graduation party, so it was just a matter of caramelizing some onions, grating some cheese, and filling and heating the tortillas.
Easy and casual. Warm, gooey, and satisfying.
This fiesta dip is easy and casual as well. As a matter of fact, I almost always have all of the ingredients in the pantry and fridge, ready to stir up for the makings of a great carefree deck date.
I’ve been making this dip for so long, that I have it memorized, and don’t even know where the recipe came from. Hopefully you’ll try it and add it to your list of favorites as well.
Beware, however. This stuff’s addicting!
Here’s how you make it.
– 2 cups sour cream
– 2 cups shredded cheddar cheese
– 4 oz. can chopped green chilies
– 4 oz. can chopped black olives
– 1 package Fiesta Ranch dip mix (when I find this in stock in the store, I buy 4 at a time!)
– Mix it all together and let the flavors blend for a few hours in the fridge.
– Serve cold with tortillas chips and warm friends.
How easy is that?
Then just dip, crunch, and say, “Mmm . . .”
