Frito Corn Salad: A Yummy Summer Side
For those of you who like your recipes short and sweet, but really, really tasty, this one’s for you. The only thing is, similar to the Best Grape Salad I posted previously, it’s not very appealing looking. Actually, it kind of looks like a bowl full of Fritos that someone sat on.
We can even do some artful cropping, but it’s still looks like just a bunch of busted up Fritos in a bowl.
We can display it next to a cute little dish filled with it, and still it’s somehow lacking in the looks department.
We can even make it chartreuse, posterize it, and add a big ol’ doodle heart in the center of it, and it’s still just busted up Fritos in a bowl, albeit even more off-putting than it was before.
But, you know what? Looks aren’t everything as it pertains to almost anything, and particularly when it comes to food.
The most important thing with food, is taste. And this salad tastes wonderful! It’s got crunchy peppers, tangy red onion, sweet corn, creamy mayo, and salty cheese that, together, are a palette party in a bowl. And just when we thought things couldn’t get much better, the chili flavored corn chips get tossed in for a final salty, spicy, savory, crunch resulting in a perfect bite that you will remember for all of your live-long days.
What’s more, this bowl of busted up Fritos comes together in a snap! Chop the onions and peppers (I used one orange and one green pepper), drain the corn, and you’re home free.
You’re basically mixing these ingredients together.
And then topping it off with a busted bag of these.
And somehow, some way, this super easy, homely, non-salad, salad combines into a glorious concoction.
But don’t trust me. Try it!

Here’s how you make it.

Comes together in 10 minutes!
- 2 (15 ounce) cans whole kernel corn, drained
- 2 cups grated cheddar cheese
- 1 cup mayonnaise
- 1 cup green pepper, chopped
- 1⁄2cup red onion, chopped
- 1 (10 1/2 ounce) bag coarsely crushed Fritos chili cheese corn chips
Mix first 5 ingredients and chill. Stir in corn chips just before serving.
This dish is so simple, that I’m not even sure if it needs a printable version, but here it is anyway.

- 2, 15oz cans of whole kernel corn
- 2 cups grated cheddar
- 1 cup mayonnaise
- 1 cup chopped bell peppers
- 1/2 cup red onion (chopped)
- 1 bag of chili cheese Fritos (crushed)
|Mix first 5 ingredients and chill.|
|Stir in corn chips just before serving.|
