Hearty Sausage Sandwich with Cream Cheese, Mozzarella, Sautéed Onions and Bitmojis

 

If you’ll recall, my dressmaking friends and I share a potluck lunch every Friday during the school year.

We’ve been getting together either sewing quilts for the homeless or dresses for little girls in third world countries for seven years, which means seven years of Friday lunches. Yet somehow the food never seems to become mundane. There’s almost always at least one knock-out dish that’s shared where everyone is clamoring for the recipe, and some days each and every dish on our plates is scrumptious. Soups, salads, sandwiches, fruit concoctions and desserts line the counter of whoever’s house we happen to be at that day.

So I thought it was only appropriate to use my Becky Bitmoji to introduce you to my latest contribution to our Friday sewing lunches.

The last time we met, I made a sandwich to share, which probably doesn’t sound like a big deal. However, this particular sandwich kind of is.

First of all, it’s giant. Secondly, it’s served hot with melted, gooey cheese. (Hello cheese obsession!) And thirdly, the blend of veggies, sausage, cheese, and herbs and spices is fantastic.

Basically, you take a long loaf of Italian bread, hollow out the middle, and fill it with goodness. You then bake it until the bread is crunchy and the insides are hot and steamy.

How can that be anything but delicious?

Oh yeah. I forgot to mention that sometimes my Bitmoji cops a bit of an attitude. (How completely out of character.) I’ll try to keep her in check.

Here’s how you make it.

Servings: 6

Ingredients:

1 lb. Italian sausage (casings removed – I used turkey sausage)

1 medium onion, chopped

1/2 cup chopped green pepper

1 garlic clove, minced

1 package (8 oz.) cream cheese, cubed

1/4 cup chopped fresh mushrooms

1/4 cup water

1/4 cup grated Parmesan cheese

1/4 teaspoon dried oregano

1 loaf (1 lb.) unsliced Italian bread

1 1/2 cups (6 oz.) shredded part-skim mozzarella cheese

 

Directions:

In a large skillet, cook the sausage, onion and the green pepper over medium heat until meat is no longer pink.

Add garlic, cook 1 minute longer. Drain. Add the cream cheese, mushrooms, Parmesan, water, and the oregano. Cook and stir until cheese is melted.

Cut the bread in half horizontally;

Hollow out top and bottom, leaving a 3/4 inch shell (save removed bread for another use.)

Place bread bottom on a baking sheet. Sprinkle with half of the mozzarella, (By the way, instead of shredded, I used sliced fresh mozzarella because I like the way it tastes and melts better.)

Top with sausage mixture, and the remaining cheese.

I mean, this is just a freaking simple sandwich. You’re lucky it’s not one of my more complicated offerings. You would actually know what waiting means with those.

Sorry, I’ll wrap things up here.

Replace bread on top. Bake at 375º for 15 minutes or until cheese is melted.
